Pork Chops Smothered in Onion and Mushroom Sauce

- Summer Squash (Zucchini)(Any)— 1, for sautéing on the side
- Lemons(Any)— ½, fresh juice for finishing

- 4 pork chops
- 8 oz mushrooms, sliced
- 2 cloves fresh garlic, minced
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 tablespoon olive oil
- ¼ cup water or chicken stock
- Salt and black pepper, to taste
- Noodles, rice, or mashed potatoes (for serving)
Instructions
- Prep the vegetables: slice the onions, slice the mushrooms, and mince the fresh garlic.
- Season the pork chops on both sides with garlic powder, thyme, salt, and pepper.
- In a pan over medium heat, add 1 tablespoon of oil and sear the pork chops for 3–4 minutes on each side until golden brown. Remove the pork chops from the pan and set aside.
- Add the onions, mushrooms, and minced garlic to the pan and sauté until the onions are translucent and the mushrooms are soft.
- Add ¼ cup of water or chicken stock. Use the liquid to scrape up all the delicious golden brown bits from the bottom of the pan — this will be the base for your sauce.
- Add the pork chops back in and let them cook for an additional 5–10 minutes.
- Squeeze fresh lemon juice over the top. Serve over noodles, rice, or mashed potatoes with sautéed zucchini or any tender green vegetable on the side.
Notes
This recipe is endlessly adaptable — sub out pork for chicken, noodles for mashed potatoes, zucchini for broccoli, or any combination you can think of. Once you understand the steps for cooking the protein and building the sauce, you can use anything in your fridge for an impressive weeknight meal.
