Easy Fresh Tomato Sauce with Gnocchi

A flavorful, fresh tomato sauce that comes together quickly — a great use for your home-grown tomatoes. Simmered with thyme and tossed with gnocchi, Parmesan, and fresh basil for an easy summer meal. Sourced from America's Grow-a-Row.

Ingredients

Primary

  • Tomatoes(Any)— 8 Roma or 2 pints cherry, diced
  • Thyme(Any)— 4-5 sprigs, fresh
  • Basil(Any)— to taste, fresh

Additional / Pantry

  • 2 tablespoons olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon Italian seasoning
  • 1 tablespoon onion powder
  • Salt, to taste
  • 2 tablespoons water (up to ¼ cup for fresh tomatoes)
  • 1 pack gnocchi
  • Parmesan cheese, to taste

Instructions

  1. Bring a large pot of water to a boil and cook the gnocchi according to the package directions.
  2. Dice the tomatoes and add them to a large pan with the olive oil. Sauté over medium heat until the tomatoes begin to soften.
  3. Season with garlic powder, Italian seasoning, onion powder, and salt. Bring to a simmer and stir often.
  4. Add water as needed to prevent the tomatoes from burning or sticking to the pan.
  5. Add the sprigs of fresh thyme. Let the sauce simmer for about 15 minutes, or until reduced slightly to your desired consistency.
  6. When the sauce reaches the desired consistency, remove the thyme sprigs and add the cooked gnocchi. Stir to coat in the sauce. Add Parmesan cheese and fresh basil, and serve.

Notes

You can use any type of tomatoes you have on hand — 8 Roma, 2 pints of cherry, or one large can of no salt-added diced tomatoes. Feel free to swap in any fresh herbs you have available.
