- Cabbage(Any)— 1 small, sliced thinly
- Celery(Any)— 2 ribs, diced
- Carrots(Any)— 2, diced
- Onions(Any)— 1, diced
- Garlic(Any)— 4 cloves, minced

- Parsley(Any)— chopped (optional)
Additional / Pantry
- 2 tablespoons olive oil
- 16 oz ground meat of choice (turkey or beef)
- 1 (14 oz) can whole peeled tomatoes
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 2 teaspoons paprika
- Salt, to taste
- Pepper, to taste
- 4-6 cups water
- 1 tablespoon mild vinegar (rice wine or white wine vinegar)
- Precooked grain of choice (rice, farro, or orzo), to serve
Instructions
- Prepare the celery, carrots, onion, garlic, and cabbage as directed in the ingredient list.
- Heat the olive oil in a large pot over medium heat. Add the ground meat and cook, breaking it apart with a spoon, until browned and cooked through. Season with onion powder, garlic powder, paprika, salt, and pepper.
- Add the diced celery, carrots, onion, and minced garlic to the pot. Cook, stirring occasionally, until the vegetables begin to soften.
- In a separate bowl, crush the whole peeled tomatoes with your hands until broken into smaller pieces. Add the tomatoes and their juices to the pot and stir to combine.
- Pour in 4-6 cups of water, depending on your desired broth consistency. Stir well and bring the mixture to a gentle boil.
- Add the sliced cabbage, reduce the heat to a simmer, and cook until the cabbage is tender and wilted.
- Taste and adjust seasoning with additional onion powder, garlic powder, paprika, salt, and pepper as needed. Stir in the mild vinegar to brighten the flavor.
- If using, stir in chopped fresh parsley just before serving.
- To serve, spoon the soup over your choice of cooked grain (rice, farro, or orzo) and garnish with additional parsley, if desired.
Notes
This soup adapts endlessly to your family's preferences — swap the grain, use turkey or beef, or add extra vegetables. Leftovers keep well in the fridge for up to 3 days and the flavors deepen overnight.
