Basic Granola & Peach Parfait

Serves 10 (granola makes 5 cups)A homemade granola layered with yogurt and fresh peaches for a simple, healthy breakfast or snack. The granola makes about 10 servings and keeps in an airtight container. Sourced from America's Grow-a-Row.
Ingredients
Primary
- Peaches— Fresh, sliced (or other fruit of choice)
Additional / Pantry
- ½ cup canola oil or other neutral oil (coconut or olive oil)
- ½ cup honey or maple syrup
- ½ tsp ground cinnamon
- ½ tsp salt
- 3 cups old-fashioned rolled oats
- Yogurt
- Fruit of choice: berries, plums, pineapple, banana, etc.
- Toppings: coconut, raisins, nuts, honey, pumpkin seeds
Instructions
- Heat the oven to 300°F and line a baking sheet with parchment paper or foil.
- Whisk together the oil, honey, cinnamon, and salt. Add the oats and stir to coat.
- Spread the oats out onto the prepared baking sheet.
- Bake for 20 minutes, stirring halfway through. The granola is ready when golden-brown — it will still feel wet coming out of the oven but will dry as it cools.
- Remove from the oven. If you want clumps of granola, press and tamp down the granola before it cools, which will help it stick together. Cool completely before storing.
- Store in an airtight container.
- To assemble the parfait: In a cup or bowl, spoon in some yogurt, then layer with granola and fruit. Top with seeds, nuts, coconut, or honey.
Notes
Chef's Tips: • You can add nuts and seeds to the granola mixture in step 2 with the oats. • If you like raisins or other dried fruit, stir into the granola after taking it out of the oven in step 5.
